First, don't go Night Elf. Draenei or Worgen are both suitable choices.

As far as naming goes, I tend to pick names (usually just single words) from songs for some of my characters names. I'd suggest just finding a name that you like; it doesn't have to be race related! :)

Expect their racial to be nerfed, just like the worgen was.

I generally find names that have a tendancy to piss people off....it was hilarious on heroic Lich King right after the name change

Me: Shambling enraged, stuns on DR
Raid leader:BIG HEALS ON DONTHEALME
Me: Out of Cds, shambling at 10%
Raid leader: DONTHEALME HEAL HIM NOW, HEAL DONTHEALME

Shortly after though he took to calling me DHM and the majority of the fun was gone, although the irony in it still draws many comments in pugs etc.

I don't even remember what my priest's initial name was, but when I went from undead to troll when I main switched I took worldboss because of a joke that lasted for all of t12 and most of t11 from a take over of the TB quest area where I led our guild to have the alliance pinned in their base for over 3 hours, and spent the majority of it tanking all the guards in the whole base...it started then with some pugs who joined calling me a Worldboss since thee guards raped most people.....it pisses off the alliance which makes me happy because they really can't resist going after me which gives me free Hks.

I tried to be creative when I created my first Night Elf. I looked up elven translations and chose Marathal, which I think at the time meant Elven Healer or something like that.

When I wanted a Horde, I created Darkmarathal, I have had Maraclaws, Marashammy.

By far my most creative name was my bank toon. Filetmignon in the guild

<is Better with Bacon>

My wife rolled an alt Scallops

Then there are all of our Dark Shadows toons and guilds. Not the new version, the classic black and white.

I guess it all depends on how you want to play your character. I have found personally that people that play Tauren with clever names seem to be more relaxed and play to have fun. Some people look down on those with clever names, mostly I think part jealousy for not thinking of it themselves.

You could always go with a Panda Shadow Priest Shumailazers

I don't even remember how I came up with the name Rubine (pronounced Roo-bean), but it's been the name of my priest since I made her. Lots of people call me Rubi (Ruby), so most of my alts names are some play on the phonetics of Rubine or Rubi (Roobean, Roobie, Rooby, Rewbee, Rewbean, etc). Not very original, but it always makes me smile to try to come up with new spellings for alts.

I do have the name Roobear reserved for when I make a panda. Haha.

CSB

My original priest's name was "Wanfohk" ('Juan-Folk' -- don't ask). I had a rogue alt I made in Vanilla where I was trying to (at the time) make the most stereotypical gold farming character, so I rolled a female Night Elf rogue named "Isellag", aka 'I sell Ag' or 'I sell silver'. The naming was a screw up on my part where I confused the atomic symbol for gold (Au) with that of silver (Ag), but it made it even funnier.

My priest was Wanfohk from Vanilla through a good chunk of Wrath, then I got /lolreported and force name changed.

It was at this point I decided to have some fun with it: Isellau became my Priest's name, along with all of the people whose head the joke sailed over. A few people caught on, including a few who stole the name and used it on server transfers! (Veiled can confirm this ;) ).

It was about the same time I started doing the BiS list and posting places frequently with the name of 'Twintop' (which I use for...everything...not just in WoW), so I decided to just change my priest to that.

/CSB

On topic: Inside or subtle jokes are better than puns/obvious cliches in my opinion (and less likely to get you /reported and force changed). The joke doesn't even need to be limited to being related to your class/spec/race/faction/etc.

I tend to name my characters after truly Epic people / characters.

I tried to do something clever when "Freddymercury" was too long, so I made Frmercury. Short for Freddy Mercury (lead singer of Queen) and could also read as Fr. Mercury (as in the abbreviation for Father aka a Priest). The only person who made an attempt to figure it out still calls me 'Farmer Curry' to this day :(

Other chars: (Lou) Ferrigno is my Enh Shammy, Hephaestus is my Prot War, S(nake) Plissken for my DK... Woaden is a root form of Odin so I have a day of the week named after me :)

So my 2c is pick someone epic and name a toon after them. Try to stay out of the complete mainstream though.
